Watching PAPRIKA TV I found this recipe. The complete recipe also had a salmon there besides this rice, but I didn't have salmon, but I had crucian :)
I noted as a hard-working student everything the cook said and ... here's what came out.

  • - 150 gr wild basmati rice
  • - 1 egg (for omelet)
  • - olive oil
  • - sesame oil (I did not have)
  • - 1 suitable onion
  • - 1 celery stalk
  • - 1 suitable carrot
  • - soy sauce
  • - salt to taste
  • - a few sprigs of parsley for decoration

RECIPE PREPARATION Fried rice:

We put the rice to boil in water, so that we have 1 measure of rice and 3 measures of water.

From the egg we make an omelet but not very fried, so that it doesn't have dark parts. We cut it into small pieces.

Chop the onion and carrot into small pieces and heat them in olive oil.

When they are almost cooked, add the chopped omelette, boiled rice and well drained water, soy sauce, mix quickly and turn off the heat.

Mount on the plate with a ring, put a little greenery on top.

Put the pieces of fish together.

I don't know what happened to me with the rice, but I'll tell you for sure that I still have some recipes ready. This time we return to the well-known egg fried rice. I try to correct my Romanian as much as possible, but it doesn't seem to have the same resonance in Romanian. Instead, when you pronounce egg fried rice, you already seem to taste it.

I can say that the episode of David Chung from Ugly Delicious (who is my hero) dedicated to fried rice seemed to make me crave rice non-stop. A humble, very versatile kind that develops differently in every home. A principle is clear and universally valid. You need a day or two old rice. Boil the rice, then leave it in the fridge covered so that it does not dry completely. Now, they said it should be brought to room temperature before cooking, but it also goes straight from the fridge.

About the type of rice you need a common rice with long grain. Not bean by bean, I do not prefer and by no means jasmine or basmati. Be just as careful not to use arborio or camolino (the one with a round bean for risotto) that it won't work out again.

Don't throw soy everywhere. If you don't have a light soy sauce (like the one from kikoman) that will only flavor your food, you better not skip it. What you need to be extraordinarily good is fat like butter and garlic to flavor the oil. Do not leave the raw garlic because then it will be too pungent.

  2. After the rice has boiled, drain it well in a sieve and leave it in the air to dry well.
  3. Meanwhile, clean the vegetables. Onions are cut into fish, and carrots and gulia are cut into thin sticks (I used a special vegetable peeler, which helped me a lot).
  4. Heat the wok on the fire and add the sesame oil.
  5. Fry the added vegetables all at once (1 minute), stirring quickly.
  6. Lightly place the vegetables on the edge of the wok and break the egg in the middle.
  7. Mix immediately with the vegetables (uninterrupted movements), so that the egg is finely ground and mixes well with the vegetables, almost becoming invisible.
  8. Add soy sauce, salt, pepper and chili, then dry rice well.
  9. Mix everything for another 1 minute on the fire, then turn off the heat.
  10. Distribute the fried rice with vegetables in bowls and serve immediately, with soy / chili sauce, etc. next to.

Fried rice

More difficult than "add a bag of rice to boiling water and cook for X minutes". Tighter, more colorful, more appetizing.

What do you need?

Obviously, rice. Two 125 g bags. Which you like. Then some Prague ham. Less than 100 g. An average yellow onion, and two to three strands of green onions. Half a red bell pepper and a few grains (20-21) of fresh or frozen peas. Some sesame oil (½ teaspoon) and some "normal" oil (olives, sunflower, etc. - a tablespoon, two).

How do you proceed?

  • Start the same way as "add a bag of rice to boiling water and cook for X minutes", only boil X - 3 minutes. That is less than it says on the package, so that it is not completely boiled. "Al dente," as pasta eaters would say.
  • Cut the ham into small pieces and brown it in the sesame oil folded with normal oil. 2-3 minutes on medium heat would be enough. Set aside the fried ham and top up, if necessary, the oil in the pan.
  • Saute finely chopped yellow onions until glassy.
  • Add the diced bell peppers and cook for another 1-2 minutes.
  • Now turn the rice in the pan (without the bag). Cook for 1-2 minutes, stirring.
  • Add the peas and green onion rings. Heat for another 2 minutes, stirring.
  • Add the fried ham back to the pan, season with salt and pepper.
  • Pour ¼ a cup of water, stir and keep on the fire until the water evaporates (about 3-5 minutes).

That's about it. You just got a wok chicken, pork or beef garnish. Or with a garnish of Tikka chicken or Tikka Masala.
